Pollo Violado..mexican beer butt chicken

This is just to show how the street vendors in Mexico make beer butt chicken. A good friend and co-worker from other fta sites named Nebur sent me this. I won't go into the many recipes, everyone has their fav so unless requested will just show you this unique device, notice the small grill on the label below the bucket....BTW, hot coals go in the top recess of bucket so chicken cooks from below and above

have you never had beer can chicken???...ya ought to try it, works good with lemon-lime soda also..

one trick if the butcher didn't leave enough neck skin to pin over opening is use an onion or potato...usually I use an onion
