What does changing servers actually do?

Hello people

As i bought 20 NFPS donations a month back this allowed me to have a re-seller account and online user menu to access them all.

My question...

When i look at the donations i have used. There is an option to select for any particular donation up to 12 different servers.

When you create a new account the system just randomly selects one. But you can alter it to another server.

So whats the benefits of swapping servers if any?

Would they , should they not all be performing at the same level?

It all falls in the same service so no need to change anything unless instructed.
