My first attempt at home made Kimchi

I made one batch and used a bit too much ginger, and holy wow did it have some snap !!!
I also usually end up adding too much Red Pepper flakes, but I do like my kim chi 'Smack My Ass and Call Me Sally' hot !!!
You know you gots a good batch when you sample it and then push it away with tears in your eyes, but within a couple minutes you are wanting more :)


Might be time I join you in a batch :)

ohh and here's a tip for next time you make up a batch.
Turn your home theater system on and while you make the Kim Chi, play the theme song from The Good, The bad and The Ugly :)
It will help to make some great Kim Chi ....works every time :)

I do like my kimchi spicy. I never tried making it, though. Fermented foods are reputed to be a great addition to a healthy diet. Thumbs up to kimchi!

I have been playing with Fermentation for just over a year I have my sauerkraut and carrots down to a science
Still working on the fermented pickles

Never tried fermented carrots...although there's a smidgeon in some kimchis. Sounds interesting. I guess just about any vegetable could be fermented.

From my understanding there are not many vegetable can be fermented

As far as healthy everything that I have has nothing but good benefits from Fermented food , I have come across some recipes that add sugar I always delete the sugar

I think just about any can, but some may not turn out that great...
